Depaz Blue Cane Amber Rhum is an agricole (agriculture) rum from The Depaz Chateau & Estate in the French West Indies isle of Martinique. Depaz is 90 Proof (45% ABV) and retails for roughly $42.00, currently available in a variety of locations.
The Rhum (the alternative spelling to rum), is created from 100% sugar cane juice from fresh cut Blue Cane, a hard to grow/expensive sugar cane. Many rum brands, today, utilize molasses or other products over pure sugar cane because of accessibility, cost, speed, etc. The agricultural methods used by Depaz utilizes is only found within 3% of the worlds rum production and their high standards has granted them the Appellation d'Origine Contrôlée (AOC), a French certification granted to agricultural products including no artificial coloring or flavorings.
Established in 1651 by Martinique's premier gouverneur, Jacques Duparquet, the estate is nestled in the coastline city of St. Pierre on the French Island of Martinique. Here, they grow fields of Blue Cane used to create Depaz Rhum. In 1902, Mount Pelee delivered a devastating volcanic eruption which killed most of the family. In 1917, an impassioned Victor Depaz returned as the sole member of the family to rebuild the estate and its distillery.
Victor Depaz replanted the hundreds of acres of Blue Cane and started over again. Today, this proprietary blue cane delivers a floral nose and refined characteristic to Depaz Rhum.
The company harvests the cane, generally in the spring, when the cane is ready to be pressed into juice. The Blue Cane is difficult to grow but yields a great quality juice. Once the juice has been extracted the dry fiber remains (called BAGASSE) go back into the boilers to burn and provide steam energy to the engine that powers the cane crushing and heat for the stills.
